Being home with the kids for Christmas break, gave us some time for the kids and I to find some new favorite recipes. Here is one that we really enjoyed from the website pinchofyum.com Chicken Pizzaiola.
It is an easy recipe to make and fun for the kids to help out with sprinkling cheese and adding the pepperoni.

3 cups of your favorite spaghetti sauce
1 cup shredded parmesan cheese
4 boneless skinless chicken breasts (about 6 ounces each)
1 cup shredded mozzarella
2 ounces sliced pepperoni
8 ounces spaghetti
Chicken: Heat the oven to 450 degrees. Spread tomato sauce into a 9×13 baking dish. Spread the parmesan cheese in a shallow dish. Season the chicken with salt and pepper, and coat with Parmesan. Lay chicken on top of tomato sauce. Bake for 15 minutes.
Once the chicken is out of the oven, sprinkle mozzarella and pepperoni slices over the chicken. Increase the oven temperature to 475 degrees and continue to bake until cheese melts, about 5 minutes.
Spaghetti: While the chicken is cooking, bring 4 quarts of water to boil in a large pot. Add pasta and 1 tablespoon salt and cook, stirring often, until al dente.
Spoon some sauce from the baking dish into the pasta and toss to combine. Serve with chicken and remaining sauce.
