The Superbowl and a Really Good Bean Dip

The Superbowl is coming! Even though the teams that my family and I cheer on are not in the Superbowl this year, we still enjoy watching the game. How can you not, the excitement of the players, the food, and let us not forget the Superbowl commercials! Most of all the food, this is an event where I excuse myself from calorie counting or other such things.

Here is an appetizer I would like to share with you and I will be making it for my family. Southwest Bean Dip, if you like the flavors of the southwest…this is a great dip for you.

Ingredients:

16 oz. can refried beans, preferably “spicy”
15 oz. can black beans, rinsed
4 scallions, sliced
1/2 cup of your favorite prepared salsa
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 cup pickled jalapeño slices, chopped
1 cup shredded Cheddar cheese
1/2 cup sour cream, I prefer lite
1 1/2 cups chopped lettuce
1 medium tomato, chopped
1 medium avocado, chopped
1/4 cup sliced black olives, (optional)

Preparation:

This is so easy to prepare! Mix by hand, the refried beans, black beans, scallions, salsa, cumin, chili powder, and jalapeños in a medium bowl.

Pour the mixture into a shallow 2-quart microwave-safe dish, and sprinkle with the cheese.

Microwave on high until the cheese is melted and the beans are hot, about 3 to 5 minutes, time is dependent on your microwave. Be careful when you remove it from the microwave; it is hot!

Spread sour cream evenly over the hot bean mixture, then sprinkle the lettuce, tomato, avocado, and olives (if using) over the bean dip.

Eat Up

Serve the dip with your favorite nacho chips and enjoy the game!
