One goal of mine is to completely eliminate, or close as possible, processed foods from our diets. I want to make everything homemade, and with a lot of flavor. I am looking for recipes that are a good representation of my children’s favorites.
I found a really great macaroni n cheese recipe and tried it out last night, my kid’s love it!
It is a little more ‘grown’ up macaroni n cheese than what they are used to, but it’s a really great option and I know what I am putting into the dish. This macaroni n cheese recipe comes from the http://thepioneerwoman.com/ Web site, and if you watch the Food Network, you are probably familiar with this lady and her wonderful home cooking.
4 cups dried macaroni
1 whole, beaten egg
½ stick of butter
¼ cup all-purpose flour
2 ½ cups milk, I used 2%
2 tsp dry mustard
1 pound grated cheese, in this batch I used ½ pound of asiago cheese and ½ pound of cheddar (I love cheese!)
½ tsp salt
½ tsp seasoned salt
½ tsp black pepper
The web site adds, Optional Spices: Cayenne Pepper, Paprika, Thyme. I did not add these in, since this was the first time using this recipe for our family.
Pre-heat the oven at 350 degrees.
Boil about six cups of water and cook the macaroni until very firm, about 5-6 minutes.
Drain the macaroni.
Beat the egg in a small bowl and set aside. In a large pot, melt the butter and sprinkle in the flour. Whisk this mixture over medium-low heat and cook it for about five minutes, whisking constantly. Be careful not to burn or scorch it.
Pour in the milk, add the mustard, and whisk until smooth. Cook this for about five minutes or until the mixture is very thick. Reduce heat to low.
Temper the egg, take ¼ cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the egg and until smooth.
Pour the egg mixture into the sauce. Whisk the mixture constantly, until smooth.
Add the cheese and stir to melt, add the salt and pepper. Taste the sauce and add more salt and/or pepper according to your taste.
Pour in the drained, cooked macaroni and stir to combine.
Pour the mixed noodles into a buttered baking dish, (I used a 13 x 9 glass pan) top with extra cheese, and bake for 20 to 25 minutes or until bubbly and golden on top
