Caprese Pasta Skillet

This is a perfect summer dish that mixes fresh basil, cherry tomatoes, pasta and mozzarella. How can you go wrong with this dish! I found this recipe at acedarspoon.com and it is a quick 30 minute meal that will have the whole family asking for more. It’s a great dish idea for those that garden and to use up your beautiful garden tomatoes and basil!

Ingredients

6 oz linguine

½ cup reserved pasta water

1 cup fresh chopped basil

6 oz fresh, chopped mozzarella in chunks

6 T. olive oil

1 pint cherry tomatoes

3 minced garlic cloves

1 teaspoon dried oregano

1 teaspoon crushed red pepper flakes (optional)

 

Instructions

Cook pasta according to the box instructions, but reserve a ½ cup of the pasta water when done, and set aside. (Be very careful not to burn yourself!)

Heat 6 T. of olive oil in a large skillet and sauté the tomatoes for about two minutes.

Add the garlic and oregano. Continue to cook the tomatoes until soft.

Add the reserved pasta water, stir to combine the ingredients and simmer for an additional 1 minute.

Add the pasta, basil and mozzarella. Continue to heat on low, stirring until the cheese is melted. This will be about 2-3 minutes. Add salt and pepper to taste. If you are feeling spicy, add the crushed red pepper flakes (optional).

Serve warm garnished with fresh chopped basil.

Other options, add in some cooked chicken for a heartier meal. Enjoy!
