So, the garden is coming along and you’re looking for new recipes to try with those fabulous and scrumptious looking veggies. Well, here is one I came up with that gives the zucchini a zesty flare and tastes wonderful! My kiddos actually ate the zucchini.
4 medium, fresh zucchini, washed and sliced in half, length wise
1/2 cup freshly grated Parmesan cheese
1-2 tablespoons each of fresh oregano, basil, and cilantro minced
Olive oil enough to lightly brush over the zucchini slices
Salt & pepper to taste
Pre-heat your oven to 350F.
Lightly brush both sides of the zucchini with olive oil and place the slices onto a foil-lined baking sheet. Mix the Parmesan and herbs together in a small bowl and sprinkle over the zucchini. Then, sprinkle with salt and pepper to taste.
Bake for 10 minutes, and then broil for an additional 3-5 minutes or until cheese is crispy and light golden brown.
